What is it about those certain types of warm, filling yummy foods that offer such a sense of satisfaction?
Lately I've been in a pattern of eating the same things over and over. Generally I'll go for best quality ingredients at the best price, ease and convenience of making...and for me, thats a lot of marinated chicken thighs or beef, spinach, cabbage, eggs, sprouted wheat toast, grass fed butter, coconut oil and protein bars. Although it works for me, it can get a little BOR-ING!
So I thought it would be fun to take a look at a few comfort food recipes modified to a healthier version of their former selves.
These are three of my favorites. Check out one or more of these and let me know what you think :)
Flourless banana pancakes
Cauliflower pizza crust, veggie pizza
2 1/2 cups cauliflower, grated (about 1/2 a large head)
1 large egg, lightly beaten
1 1/4 cups shredded part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
Kosher salt and freshly ground black pepper
1/4 cup tomato sauce
1 cup grape tomatoes, sliced in half
2 cloves garlic, sliced
1/4 teaspoon crushed red pepper flakes
Fresh basil leaves, optional
Slow cooker baked apples
Bonus...makes the whole house smell amazing!
6 medium to large green apples
¼ cup raisins (and/or dried cranberry...almond slices)
¼ cup honey
1 teaspoon cinnamon
6 tablespoons coconut oil or grass fed butter
Slow Cooker Baked Apple Instructions:Core apples. To core, using an apple corer or paring knife, cut around the core (about ¼ inch from the stem all the way around) but leave about half an inch at the bottom. Use the knife to ‘drill out’ the core.
Divide raisins, honey, cinnamon, and coconut oil between the apples.
Place apples in a crock pot and add ½ inch of water. Cook on low overnight and enjoy a hot breakfast in the morning!
Alternatively, bake covered at 350 degrees in a glass dish for 45 minutes-1 hour in the morning.
Top with with cream, yogurt, coconut milk, or just eat plain.
